Sabrina’s Turkey Loaf

Serves 4-6

Ingredients

1     packet ground turkey (93% lean/7% fat)

1      small yellow onion, diced

1      bell pepper of your choice, diced

½     cup button mushrooms, chopped

½     cup shredded carrots, minced in food processor

1      egg

1      cup plain bread crumbs or leftover bread chopped in a food processor makes it taste even better

kosher salt

ground black pepper

garlic powder

ketchup or barbeque sauce, optional

Directions

Preheat oven to 425°.

In a large mixing bowl, mix all ingredients by hand, adding salt, pepper, and garlic powder to your discretion. Transfer the meat mixture to a glass baking dish. Press down on the meat mixture to shape it evenly to the baking dish. Cook uncovered for 1 hour. Remove and let it rest for 10 minutes.

Optional

Add ketchup or your favorite barbeque sauce (I like Sweet Baby Ray’s Honey Barbeque Sauce) on the top of the loaf 5 minutes before removing it from the oven. Or serve it on the side.
